Easy and Delicious Keto Pizza

I have tried so many different kinds of pizza crust.
The only kind I haven’t tried was a cauliflower crust, because you can’t buy it here, and I’ve made cauliflower bread once.
I’ll just put it this way:
If it’s complicated, I may try it once, but I wont try it a second time.

My life is already so incredibly busy, that I don’t have time for complicated meals.
Hey! I like to get busy in the kitchen as much as the next lady, but I like to get busy creating quick, easy, and delicious meals.
Especially considering that I’m the only Ketonian in my house – so most meals require either a modification for me, or a completely different meal.
So, if it’s not quick and easy, I’m not eating it.
I’ve tried the all cheese crust, which is okay – but a little too much cheese for me.
I’ve tried a more eggy-bread crust – and was not a fan. I don’t like baked eggs of any form, so this was a no-go for me.
Then I found a recipe for fat head dough made with coconut flour.
I couldn’t wait to try it, because I’d only ever seen recipes for fat head dough with almond flour, which if I can find it at all it is way beyond my budget.
I have played with this recipe and have come up with the perfect combo that works for me.
Plus, it only has 4 grams of net carbs per serving. This recipe makes 2 servings; and believe me, you won’t need more than one serving of this pizza.
And in case you were wondering, yes – it reheats well. So, make a whole pizza and eat it for two days.
So here we go:
For my pizza I used:
Keto Pizza Dough
Ingredients
- 200 grams mozzarella cut into chunks
- 1 TB of cream cheese
- 1 medium egg
- 1/4 c coconut flour
- 1/8 tsp oregano
- 1/4 tsp basil
- 1/8 tsp of baking powder
- pinch of salt
Instructions
In a bowl beat the egg and add the cream cheese. Mix. Add the coconut flour, oregano, salt, and baking powder and stir until crumbly.
In the microwave, melt the mozzarella, removing occasionally to stir. If your mozzarella gives off a liquid do not toss! This liquid is great because coconut flour tends to soak up a lot of liquid.
Add the cheese mixture to the egg mixture and stir. You may need to return the dough to the microwave if it becomes stiff.
Turn out onto wax paper and kneed.
Pat out into a round pizza crust and bake at 400 until brown spots start to appear.
Remove from the oven, let cool, and add your pizza toppings and bake until cheese is golden brown.

Plain tomato sauce
Salt
Pepper
Basil
Oregano
Garlic Powder
I don’t measure, I just dump and taste.
Shredded ham, sliced mushrooms, sliced green olives, shredded gouda cheese
I also usually add pepperoni (but I forgot to add it this time)
Sometimes I also like to add sliced red onion and green bell pepper.
