I used to not like anything that involves the kitchen. Cooking, washing the dishes and even cutting up vegetables..I just didn’t like it! However, I do love to organize. I think , I am good at it. My organizing habits ( I believe) crosses a fine line between being an obsessive compulsive and being an effective organizer. There is nothing wrong with wanting to know where all of your stuff is right? Well, not unless you try NOT to label everything. Guilty, that’s me.
Well now, I am happy and proud to report that I do love to cook and bake B-U-T still not a big fan of washing the dishes. I know some who absolutely love doing the dishes. I am grateful of course for our meals and dirty dishes are a good sign that we are fed and provided with the basic need that not everybody is blessed with. I just really really dislike doing the dishes after spending an hour or so in the kitchen, cooking.
Luckily, I have a very helpful husband and two little people who are always willing to help. And..thank goodness for dishwashers! Would you like to serve a meal that for sure would not have any left overs? This Tasty Sausage Pasta is a crowd pleaser, kid approved ( skip the red pepper flakes) and easy to cook. Delicious, tasty and quick to boot. Just half an hour ! How awesome is that?
1 box/package rigatoni pasta
1 lb sausage
1 cup diced, yellow bell pepper
1 cup diced , red bell pepper
1 cup diced, green bell pepper
1 8oz Baby Spinach
1/2 cup, diced onion
2 tsp 21 Day Fix All Purpose Seasoning, SEE HERE.
2 tsp red pepper flakes
1/4 cup Parmesan cheese, optional
Prep your veggies. I always adore the colors!
I bought this pasta over at Aldi. I love the shape and how chunky it is. Cook pasta according to package instructions. Reserving 1 cup of pasta water. Drain and set aside.
Brown sausage until no longer pink. Drain excess fat. Set aside.
Heat olive oil in a large pan. Saute red onion and bell peppers until translucent or tender. Add the browned sausage. Add the seasonings and cook for additional 10 minutes.
I love having these All Purpose Seasoning from 21 Day Fix on hand. What’s not to like, it is homemade and clean eating. WIN-WIN! It is very low in sodium and you can use the seasoning on pretty much all recipes. I use it with baked chicken and fish too.
Add in the cooked pasta, if you find the pasta has dried out a bit use (as needed) that saved pasta water. Turn the heat off and mix in the fresh spinach. Top with Parmesan cheese and red bell pepper flakes. You can skip the pepper flakes, it would still be as great tasting without it.
