Don’t you just love anything teriyaki? I certainly do. How about a protein pack bowl of udon noodles? What a great way to add flavor to your tofu other than marinating it to a flavorful mix of seasonings. I marinated the tofu overnight but you can actually make this a quick 30 minute meal. Instead of making your own teriyaki tofu, you can buy a package of teriyaki baked tofu. That would save you time! I just love to make my own marinades. You can also try a mixture of vegetables. Add string beans, red or green bell pepper, celery , carrots. The more vegetables, the healthier. Try soba noodles too! If you prefer it spicy like me, add red pepper flakes or use garlic chili oil. Edamame adds a nice touch to this meal.
1 16oz package of firm tofu
4 tbsp low sodium soy sauce
3 garlic cloves, minced
1 tbsp, grated ginger
1 tbsp honey
1 tbsp rice vinegar
1 tbsp sesame oil
1 tsp chili garlic oil (optional)
2 packages, Udon noodles ( discard the sauce included)
1 tbsp olive oil
2 cups zucchini, diced
2 cups yellow bell pepper ( red or green is okay too!)
1 teaspoon sesame seeds
1 cup edamame.
Prepare your tofu by draining the water. Place the tofu on a paper towel topped plate. Then put another paper towel on top of the tofu, followed by another plate.This is just so we can completely drain the excess water and moisture. When ready, cut the tofu into cubes. Prepare the marinade for the tofu by whisking the soy sauce, honey, ginger, minced garlic, sesame oil and rice vinegar. Set aside.
Pour the marinade over the tofu. I marinated the tofu overnight. I like the tofu to absorb all the flavors from the marinade. The next day, I just I gave the bowl a very very careful mix ( or just turn the chopped tofu one by one , if you have the patience) just so all the sides are “browned” and flavored.
Pre heat oven to 350 degrees and line your cookie sheet with foil or parchment paper. Arrange the tofu in a single layer on top of the sheet. DO NOT THROW THE MARINADE. Bake for about 1 hr. ( check on 45 minute mark)
Cook the Udon noodles according to package instructions. Drain and rinse under cold water. Set aside.
Heat oil in a large skillet. Saute the zucchini and bell pepper. Cook for 3 minutes or until tender. Pour in the marinade sauce and bring to a simmer , 2 minutes tops. Add the tofu , followed by the noodles. Toss with edamame and sesame seeds. Cook until Udon is heated through.
Optional : You can add the chili garlic oil for that spicy kick!
